Morphometric and quality changes by application of three calcium sources under mild thermal treatment in pre-cut fresh melon (Cucumis melo L.)

  • Image analysis of cell morphology is an efficient tool to evaluate the effect of calcium application on melon.

  • The cell morphometric parameters showed correlation with macro-structural, mechanical and sensory attributes.

  • The activity of pectin methyl esterase contributed to melon tissue stabilization.

  • Lactate and calcium chloride were successful alternatives to retain the freshness of pre-cut melon.
