Effect of drying and pickling processes on antioxidant capacity of phytochemicals of chiltepin (Capsicum annuum L. var. glabriusculum)

  • Phenolics from chiltepin (Capsicum annuum L. var. glabriusculum) and their antioxidant activity were not affected by sun drying process.

  • The antioxidant activity of phenolics, flavonoids and capsaicin from chiltepin was reduced by the pickling process.

  • Despite the changes induced by the drying and pickling process, chiltepin is a good source of phytochemicals with antioxidant activity.
