Effect of drying and pickling processes on antioxidant capacity of phytochemicals of chiltepin
(Capsicum annuum L. var. glabriusculum)

Phenolics from chiltepin (Capsicum annuum L. var. glabriusculum) and their antioxidant activity were not affected by sun drying process.
The antioxidant activity of phenolics, flavonoids and capsaicin from chiltepin was reduced by the pickling process.
Despite the changes induced by the drying and pickling process, chiltepin is a good source of phytochemicals with antioxidant activity.
