  • The interfacial properties of cholesterol have biological relevance, but have been scarcely studied.

  • ADSA was applied to captive bubbles in a liquid/liquid system for evaluating interfacial properties of cholesterol.

  • Cholesterol showed surfactant properties in the different solvents used, with marked variations of the contact angle.

  • A spontaneous crystallization of cholesterol below saturation is observed in all samples.

  • The experimental data of surface tension showed good correlation with those obtained through Szyszkowski-Langmuir model.
