There are no previous scientific reports on desorption isotherm of nixtamalized maize flour.
Nixtamalized maize flour samples from industrial scale and traditional mill were studied.
We obtain good adjustment and prediction using the theoretical and semi empirical mathematical models.
The thermodynamic parameters of nixtamalized maize flour are reported for first time.
It is possible to predict the adsorption phenomena for handling and storing at different temperatures and relative humidity values.
