DETERMINATION OF MOISTURE SORPTION ISOTHERMS AND THEIR THERMODYNAMICS PROPERTIES OF NIXTAMALIZED MAIZE FLOUR

  • There are no previous scientific reports on desorption isotherm of nixtamalized maize flour.

  • Nixtamalized maize flour samples from industrial scale and traditional mill were studied.

  • We obtain good adjustment and prediction using the theoretical and semi empirical mathematical models.

  • The thermodynamic parameters of nixtamalized maize flour are reported for first time.

  • It is possible to predict the adsorption phenomena for handling and storing at different temperatures and relative humidity values.
