  • Ferulate and cafeate showed antibacterial activity against Salmonella and Listeria

  • The antimicrobial effect on bacteria is dose and time dependent

  • The ultraestructure of Salmonella and Listeria was modified when subjected to sublethal concentrations of the antibacterials

  • Elongated forms were detected in both treated bacteria and increase of nanostructures (vacuoles)

  • The increase of Feret diameter and surface area of bacteria support the idea of multicellular aggregates
